- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 can (20 oz) crushed pineapple, drained
- 1 cup sour cream
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Combine flour and granulated sugar in a medium bowl. Cut in softened butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared dish.
- Bake the crust for 15 minutes until lightly golden. Remove from oven and cool slightly.
- In a separate bowl, mix drained crushed pineapple, sour cream, granulated sugar, eggs, and vanilla extract until well blended.
- Pour the pineapple mixture over the baked crust and spread evenly.
- Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set.
- Cool completely in the dish on a wire rack. Dust with powdered sugar before serving. Cut into bars and enjoy!

- For a tangy twist, you can substitute Greek yogurt for sour cream.
