  • 2 cups self-raising flour
  • 1 large egg
  • 1 teaspoon mixed spice (optional)
  • 1 tablespoon honey or golden syrup (optional for added sweetness)

Instructions

  1. Soak the Fruits: Soak the mixed dried fruits in the brewed tea for at least 4 hours or overnight.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a loaf tin.
  3. Mix Dry Ingredients: In a bowl, mix the flour and mixed spice.
  4. Combine Ingredients: Add the soaked fruits (including any remaining tea) to the dry ingredients. Mix well.
  5. Add Sugar and Egg: Stir in the brown sugar and the beaten egg until well combined.
  6. Optional Sweetness: Add honey or golden syrup if using.
  7. Bake: Pour the batter into the prepared loaf tin and smooth the top. Bake for about 1 hour, or until a skewer inserted into the center comes out clean.
  8. Cool: Allow the loaf to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
