  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) green chilies, undrained
  • 12 corn tortillas
  • 2 cups salsa
  • 3 cups shredded cheddar cheese
  • 1/2 cup chopped cilantro for garnish
  • Sour cream for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat.
  4. Stir in taco seasoning, water, black beans, corn, and green chilies. Bring to a simmer and cook for 5 minutes.
  5. In a 9×13 inch baking dish, spread a thin layer of salsa. Arrange 6 tortillas over salsa, overlapping as necessary.
  6. Layer half of the beef mixture over tortillas, followed by 1 cup of salsa, and 1 1/2 cups of cheese.
  7. Repeat layers with the remaining tortillas, beef mixture, salsa, and cheese.
  8. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly.
  9. Let stand for 10 minutes before serving. Garnish with chopped cilantro and serve with sour cream.
