- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) green chilies, undrained
- 12 corn tortillas
- 2 cups salsa
- 3 cups shredded cheddar cheese
- 1/2 cup chopped cilantro for garnish
- Sour cream for serving
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat.
- Stir in taco seasoning, water, black beans, corn, and green chilies. Bring to a simmer and cook for 5 minutes.
- In a 9×13 inch baking dish, spread a thin layer of salsa. Arrange 6 tortillas over salsa, overlapping as necessary.
- Layer half of the beef mixture over tortillas, followed by 1 cup of salsa, and 1 1/2 cups of cheese.
- Repeat layers with the remaining tortillas, beef mixture, salsa, and cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly.
- Let stand for 10 minutes before serving. Garnish with chopped cilantro and serve with sour cream.
