  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 (10.5 ounce) can of cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cornbread mix
  • 1 (4 ounce) can of diced green chilies
  • Salt and pepper, to taste
  • Optional toppings: diced tomatoes, sliced green onions, sliced black olives

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
  • Add the diced onion and bell pepper to the skillet with the ground beef, and cook until softened.
  • In a mixing bowl, combine the cream of mushroom soup, sour cream, shredded cheddar cheese, cornbread mix, and diced green chilies. Season with salt and pepper to taste.
  • Spread the ground beef mixture evenly in the bottom of the prepared baking dish.
  • Pour the cream mixture over the top of the ground beef, spreading it out evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the top is golden brown.
