  • 4 large russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives
  • Sour cream, for serving
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the potatoes with a fork several times and rub each with olive oil. Place on a foil-lined baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  3. While the potatoes bake, cook the ground meat in a skillet over medium heat until browned and fully cooked. Drain any excess fat.
  4. Stir in the taco seasoning and cook for another 2-3 minutes.
  5. Once the potatoes are cooked, let them cool slightly, then cut each in half lengthwise and fluff the insides with a fork.
  6. Spoon the taco meat evenly into each potato half. Top with shredded cheddar, diced tomatoes, red onion, and black olives.
  7. Bake again for 5-10 minutes, or until the cheese is melted and bubbly.
  8. Serve hot, topped with sour cream and chopped cilantro if desired.
