This timeless treat, with its combination of a buttery graham cracker crust, creamy filling, and sweet cherry topping, is a perfect end to any meal. Whether you’re preparing for a family gathering, a potluck, or simply craving a delicious dessert, this Classic Cherry Delight is sure to satisfy. Here’s a detailed guide on how to make this delightful dessert.

Ingredients

To make this Classic Cherry Delight, you’ll need the following ingredients:

For the Graham Cracker Crust:

  • 2 cups graham cracker crumbs: These can be made by crushing graham crackers in a food processor or placing them in a zip-top bag and using a rolling pin.
  • ¼ cup white sugar: Adds a bit of sweetness to the crust.
  • 7 tablespoons unsalted butter, melted and cooled: Helps bind the crumbs together and adds richness.

For the Filling:

  • 1 (8 ounce) package cream cheese or 1 (8 ounce) tub cream cheese spread, softened: The base of the creamy filling.
  • 1 (14 ounce) can sweetened condensed milk: Adds sweetness and a smooth texture.
  • ½ cup freshly squeezed lemon juice: Provides a tart contrast to the sweet filling.
  • 1 teaspoon pure vanilla extract: Adds depth of flavor.
  • 1 (21 ounce) can cherry pie filling, chilled: The star of the topping.
  • ½ teaspoon pure almond extract: Enhances the flavor of the cherry topping.

Instructions

1. Prepare the Crust

Firstly, preheat your oven to 350 degrees F (175 degrees C). In a large bowl, combine the graham cracker crumbs and white sugar. Pour in the melted butter and stir until the mixture is well combined and resembles wet sand. Next, transfer the crust mixture to a greased 9-inch deep dish pie plate. Using the back of a spoon or the bottom of a glass, press the mixture firmly and evenly into the bottom and up the sides of the pie plate. Bake the crust in the preheated oven for 7 to 8 minutes, or until it is lightly browned. Remove the crust from the oven and let it cool completely on a wire rack.

2. Make the Filling

While the crust is cooling, prepare the filling. In a large mixing bowl, use an electric mixer to beat the softened cream cheese on medium speed until it is fluffy. Gradually add the sweetened condensed milk, continuing to mix until the mixture is smooth and well combined. Add half of the lemon juice and mix until incorporated, then add the remaining lemon juice and mix again. Finally, add the vanilla extract and mix until all ingredients are fully combined.

3. Assemble the Pie

Once the crust has cooled completely, pour the cream cheese mixture into the crust. Smooth the top with a spatula to ensure an even layer. Cover the pie with plastic wrap and refrigerate overnight, or for at least 6 hours, until the filling is firm and set.

4. Add the Cherry Topping

The next day, remove the pie from the refrigerator. In a small bowl, combine the chilled cherry pie filling and the almond extract. Stir until well mixed. Pour the cherry topping over the set filling, spreading it evenly with a spoon or spatula. The vibrant red cherries will add a beautiful contrast to the creamy filling and golden crust.

5. Serve and Enjoy

Cut the Classic Cherry Delight into slices and serve. If desired, garnish each slice with a dollop of whipped cream for an extra touch of indulgence. This dessert is best served cold, so keep any leftovers refrigerated.

Tips for Success

  • Crust Tips: To ensure a perfect crust, press the graham cracker mixture firmly into the pie plate. This helps the crust hold together when sliced. If you prefer a thicker crust, you can increase the amount of graham cracker crumbs and butter proportionately.
  • Cream Cheese Softening: Make sure the cream cheese is softened before mixing. This ensures a smooth, lump-free filling. If you forget to take it out of the fridge in advance, you can soften it quickly by microwaving it for 15-20 seconds on low power.
  • Chilling Time: Chilling the pie overnight is essential for achieving the right texture. The extended refrigeration time allows the filling to set properly, making it easier to slice and serve.

Variations

  • Different Pie Fillings: While cherry pie filling is a classic choice, you can easily switch it up. Blueberry, strawberry, or even apple pie filling can be used for a different flavor profile.
  • Nutty Crust: For added texture and flavor, consider adding finely chopped nuts, such as pecans or walnuts, to the graham cracker crust mixture.
  • Chocolate Twist: For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the graham cracker crust mixture. You can also drizzle melted chocolate over the top of the cherry layer for an extra decadent touch.
